Ham BBQ Sandwiches
In Southwest Pittsburgh there is a deli meat called Chipped Ham. Essentially it is a cheap ham sliced paper thin. If they are unfamiliar with “Chipped Ham” in your area ask the deli to slice ham paper thin. Almost every friend, family member or coworker makes this dish but for me the star is my homemade BBQ sauce. This is the base recipe. Add to it as you wish to compliment what you are having with the meal or use similar spices you are cooking with to bring out those flavors.
64 ounces Heinz Ketchup
22 ounces Port wine
10 ounces water
8 Ounces Molasses
1/2 Cup Brown Sugar
2 TBS choped Garlic
1/4 Cup chopped Onion
2 Tsp Cayenne Pepper
1 Tsp Olive oil
In a large sauce pan on medium heat, heat the Olive Oil and sweat the Garlic and Onions until the Onions are clear and the Garlic starts to brown.
Pour in the Ketchup, Water, and Wine and stir to combine.
Add the Molasses and Brown Sugar and Cayenne
Heat until sauce begins to boil then turn down to a simmer.
Stir occasionally to allow the sauce flavors to marry.
To make the Ham BBQ
2 lb Chipped Ham
Heat your crockpot to Low
Add BBQ sauce
Separate Chipped Ham slices and add slowly to sauce to allow it to absorb sauce.
Add the entire 2lbs of ham to the sauce.
Allow to cook for 4-6 hours on low.
